Creamy Chicken & Sausage

Creamy Chicken & Sausage in 5’s

Ingredients

2 tsp Olive Oil

2 garlic cloves - finely chopped

2 Tbls Sun Dried Tomatoes by Mezzetta – finely chopped

Basil Paste by Gourmet Garden – 4 - ¼” lines

1 - 7oz can of Mushroom pieces & stems

2 Tbls Brandy

1 large chicken breast

Ground mild sausage

Italian dressing – your choice

Salt & pepper to taste – I do not use it

1 ½ cup chicken broth

1 ¼ cup heavy whipping cream

Wacky Mac Veggie spiral pasta – rainbow colored

1 ½ cups Shredded Cheese your choice

*Cheese: your preference if you want more - I use Kroger brands: Italian blend, Swiss & Marble Cheddar, I don’t normally measure the cheese, I just add it 1 scoop (handful) at a time.

Regular Skillet for cooking sausage

1” thick skillet for cooking rest of ingredients

Preparation

  • · Marinate chicken in the Italian dressing in the fridge for at least 2 hours, overnight if possible.

o Cook in George Forman, if you don’t have one cook in the over at 425 ̊ for 25 minutes or until pink is gone from the middle depending on how thick the chicken breast is

o Cut chicken into pieces and set aside, or in fridge.

  • · Cook ground sausage over medium heat like you do hamburger in a skillet. You will only need about a cup of this (or more, your preference)

o Drain sausage in a strainer to take off excess grease

o Set aside 1 ½ cup

o Put the rest of the sausage in the fridge or freezer to use later

Cooking Directions

  • · Bring water to a boil in medium size pot

o Cook paste over medium heat until soft & firm, not squishy (about 8-10 minutes after water boils)

  • · In 1” skillet over Medium heat; Heat olive oil

  • · Sauté chopped garlic

  • · Add in mushrooms and sundried tomatoes – sauté for about 5 minutes

  • · Add in chicken & sausage and cook for about another 5 minutes

  • · Add in chicken & sausage and cook for about another 5 minutes

  • · Pour in chicken broth: cook for 5 minutes

  • · Stir in Brandy

  • · Stir in 4 – ¼ “ strips of Basil paste : cook for about 5 minutes

  • · Pour in Heavy whipping cream, occasionally stir until it comes to a boil (about 5 minutes)

  • · Add in cheese to the thickness you desire, as suggested above.

  • · Heat bowl in microwave for about 45 seconds and add in ½ of the pasta, pour in the mix and then put the rest of the past on top and stir evenly

Serving suggestions

  • · You can serve your paste separate from the mix and let your guests or family take from each

  • · I like to serve together in a large bowl (after I warm up the bowl) I put in ½ the pasta, add the mix, the sauce, the rest of the pasta, mix it up & serve. This way when you store left-overs, when there are some, it’s already mixed and the special sauce has marinated into the pasta noodles… so much yummier reheated!

  • · If you don’t want to make this much pasta, cut everything on the recipe in ½ or ¼
